BBQ Chicken Lettuce Wraps

BBQ Chicken Lettuce Wraps

Ingredients:

1/2 cup ketchup

2 tablespoons lite soy sauce

1 tablespoon brown light sugar

1 tablespoon apple cider vinegar

2 tablespoons Worcestershire

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon sriracha

1/2 teaspoon salt and pepper

6 boneless chicken thighs, about 2 pounds

1/4 cup chopped cashews

2 tablespoons chopped chives

12 pieces of butter lettuce, washed and dried

Salt and pepper, to taste

Directions:

  1. Add the ketchup, soy sauce, brown sugar, vinegar, Worcestershire, garlic powder, onion powder, paprika, chili powder, cumin, sriracha, + salt/pepper into a bowl and whisk. Add the chicken pieces to the bowl and let marinate for 30 minutes. Once the chicken is done marinating, remove the chicken breasts and then add the marinade to a pot and boil until thickened. This takes about 8-10 minutes. Set aside,
  2. Once ready to grill, turn the grill up to a high heat. Cook the chicken about 20 minutes, flipping halfway through, and basting the chicken every few minutes. Cook until an instant read thermometer registers to 165 degrees. Remove the chicken from the grill and rest for 5 minutes. Chop into small pieces and add to bowl along with the cashews and chives. Taste for seasoning.
  3. To serve, add roughly 1 cup of your chicken mixture to each piece of lettuce and enjoy!
