Toast your Eggos until they are slightly browned. Add your sprinkles to a plate. Scoop 1 cup of ice cream to both sides of the Eggo and form your sandwich. Next, roll the ice cream side of your Eggo sandwich to the plate with the sprinkles so it's completely covered. Enjoy!
