Filipino Pork and Chicken in Adobe

Serves 4 | Total Cook Time: 2 hours

Filipino Pork and Chicken in Adobe

Ingredients:

1 pound boneless pork loin, cut into cubes

1 pound chicken breasts, cut into cubes

1/4 cup low sodium soy sauce

2 tablespoons ketchup

1/2 cup chicken stock or water

2 bay leaves

1 tablespoon pink peppercorns or regular peppercorns

4 garlic cloves, whole

1 shallot, chopped

1 tablespoon sliced ginger

1 bag frozen veggies (I used broccoli, cauliflower, and carrot)

2 teaspoons sesame oil

1 bag of miracle rice, follow cooking instructions on package

Salt and pepper, to taste

Directions:

  1. Take out a pot and add in the chicken, pork, soy sauce, ketchup, stock, bay leaves, peppercorns, garlic, shallot and ginger. Bring to a boil, then down to a simmer, cover (with the lid ajar) and cook for 1.5-2 hours. The longer the better! Once the meat is tender and is falling apart., remove the big pieces of ginger, shallot, bay leaves, and most of the peppercorns. You should have a thick, glossy sauce left.
  2. In the last 10 minutes of your meat cooking, I microwave my bag of vegetables, then toss in a little sesame oil, do the same with the miracle rice.
  3. Serve the pork, veggies, and rice in a big bowl and drizzle the sauce on top!
